Here is another great slow cooker freezer recipe from my favorite freezer cookbook!
This recipe makes a lot of food. I usually half everything and fix it that way. However, it does seem to cook quickly, so keep an eye on it.
6 lbs. boneless, skinless chicken breast halves
2 16 oz cans pineapple slices, drained
1 15 oz cans mandarin oranges, drained
1/4 cup cornstarch
1/2 cup brown sugar
1/4 cup soy sauce
1/4 cup lemon juice
1 tsp. salt
1 tsp. ground ginger
1/2 tsp. ground red pepper
(optional: toasted almonds, green pepper chunks)
–To Freeze: Combine all ingredients in gallon Ziploc freezer bag. Freeze.
–To Serve: Thaw completely. Dump contents of bag into slow cooker. Cook on low for 4-5 hours or high 2-3 hours. (If using, add green pepper one hour before serving.) Serve over cooked rice and topped with toasted almonds.
