Chicken Cacciatore in the slow cooker

I cannot say enough wonderful things about this recipe.  It is delicious and kids love it.  If you choose not to serve over pasta, it is kind of a light dish.  You can make it in the slow cooker.  It is just so easy!

We made this at the last freezer make and take I hosted.  One of the ladies who came wrote this about it:

“Have y’all made the chicken cacciatore yet??? Have MERCY it’s delicious! BOTH of my kids loved it and asked for more, my oldest and pickiest asked if he can also have it for lunch tomorrow, and (my husband) DRANK THE JUICE after he’d eaten all of his! Woo hoo!!!”

HAHA!  That cracked me up!  But it is so true.  My ENTIRE family loved it, too.  And with six people in our house, its hard to please all six for a meal.

Chicken Cacciatore
2 medium onions, sliced thin (I just used about 1 cup or more of frozen chopped onions.)
2 cloves garlic, minced
1 15 oz.can diced tomatoes
1 8 oz. can tomato sauce
1 tsp. salt
1/4 tsp. pepper
2 tsp. oregano
1/2 tsp. basil
1/2 tsp. celery seed
1 bay leaf
1/4 cup white wine
6 boned chicken breasts (I used 1-2 lbs. boneless, skinless chicken breasts.)
To Freeze:  Combine all ingredients in a gallon Ziploc freezer bag.  Freeze.
To Serve:  Dump contents of freezer bag into slow cookers.  Cook on low 6-8 hours or on 2.5-4 hours.  Serve over pasta with Parmesan cheese.
