Beef Fajitas

This tasty recipe is yet another from my favorite freezer cookbook.  Please, do yourself a favor.  Just buy the cookbook.  You won’t regret it.

Beef Fajitas
1 1/2 lbs. round steak
1/2 cup fresh lime juice
1/4 cup tequila
3-4 cloves garlic, finely minced
1 tsp. salt
1/2 tsp. freshly ground pepper
To Freeze:  Cut beef into 4 pieces.  Place meat with all other ingredients into a gallon Ziploc freezer bag.  Freeze.
To Serve:  Thaw completely.  Discard marinade.  (Saute fajita veggies in oil.  You can use fresh veggies or buy them in the frozen foods section all together in one package.  Usually fajita veggies include red, yellow, green bell peppers and onions.)  Grill beef or stir-fry in heavy skillet over medium-high heat.  Carve beef into thin slices.  Quickly stir beef and vegetables together in skillet and cook for 1-2 minutes or until heated through.  Serve in warmed tortillas with desired toppings.  (Ideas for toppings–cheese, sour cream, lettuce, salsa, tomato, guacamole.)
